Just A Pinch: After the Holidays

The holidays are over and everyone is back to normal. It has always been a dilemma over what to cook when all the fun and festivities are over. Here are some good recipes that I’ve tried recently. Enjoy!

  1. Heat olive oil and garlic in a skillet. Stir in smoked sausage slices and cook until brown. Add pepper, onion, broccoli, broth and tomato sauce and simmer for 10 minutes, until the vegetables are tender and the liquid is absorbed. In the meantime, prepare rice according to package instructions. Stir rice into the skillet, sprinkle with cheese and serve.

  1. Place oil or butter or drippings in a large skillet. Heat over medium heat. Using a wooden spoon stir in flour until mixture is smooth, bubbly, and starting to brown. Whisk in the 1 ¾ cups milk, the salt, and pepper. Cook over medium heat, whisking constantly, until thickened and bubbly. Cook and whisk for 1 minute. If desired thin with additional milk. You can also add 8 ounces of cooked and drained pork sausage if desired.

  1. Lightly brown meat, onion, and pepper in large pan. Drain and reserve liquid from the beans, hominy, and tomatoes. In a soup pot, combine beans, hominy, and tomatoes with meat mixture. Add enough water to the reserved liquid to make 2 cups. Cook for about 20 minutes and then add taco seasoning mix and ranch salad dressing mix. Stir and simmer for another 20 minutes and serve.

  1. Preheat oven to 325 degrees. Grease a 10 inch Bundt pan with baking spray or butter and flour it. Set aside. In small bowl, whisk together milk and vinegar. Set aside. In a medium bowl, whisk together flour, baking soda and salt. Set aside. In large bowl of a stand mixer, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and almond extracts until well combined. Beat in flour mixture, alternating with milk and amaretto. Pour batter into prepared pan and bake for 55-65 minutes, until center is set and a toothpick inserted comes out clean. Allow to cool completely before inverting onto cake plate.

  1. Combine the butter and brown sugar in a small saucepan. Heat over medium heat, stirring often until smooth. Add the cream and amaretto and bring to a simmer. Simmer for 5 minute, stirring often. Remove from heat and let cool for 10 minutes. Serve pound cake with warm drizzled amaretto sauce.

  1. Place pie crust in a pie pan that has been sprayed with nonstick cooking spray. Place crust in pan.
  2. Place the berries in a large bowl and add cornstarch, tapioca pudding mix, and sugar. Let sit 15 minutes. Stir and mix well. Pour into prepared pie crust. Cut 2 tablespoons of the butter in small pieces on top of berry mixture. Place second crust on top and press together around the edges. Cut 4 slits in crust. Cut the remaining 2 tablespoons of butter in small pieces and place on top of second crust. Sprinkle with 2 tablespoons sugar. Bake in a 350 degree oven for 30-45 minutes or until crust is brown and filling is bubbly.
